I dessa l\u00e4nder odlas ocks\u00e5 havst\u00e5ng i stor skala. I Storbritannien och Frankrike \u00e4ter man ocks\u00e5 havst\u00e5ng. R\u00f6dsallat \u00e4ts r\u00e5 tillsammans med fisk, sm\u00f6r och potatis eller kokas till en gr\u00f6t. Purpurt\u00e5ng kokas i flera timmar till en m\u00f6rkbrun, halvflytande massa som kallas marine sauce, slouk eller sloucawn. Den serveras tillsammans med citronjuice eller vin\u00e4ger. P\u00e5 Irland och i Skottland torkas den och tuggas som tobak. I Kanada kan man f\u00e5 den kanderad, och i Kamtjatka j\u00e4ser man den till en alkoholhaltig dryck. Detta \u00e4r gamla s\u00e4tt att \u00e4ta havst\u00e5ng,  men i  USA har sedan 70-talet ett nytt intresse f\u00f6r havst\u00e5ng visat sig, bland annat genom att det publiceras m\u00e5nga kokb\u00f6cker  med recept p\u00e5 havst\u00e5ngsr\u00e4tter. Havst\u00e5ng har ocks\u00e5 haft stor betydelse som foder f\u00f6r husdjur, bland annat i Norge. D\u00e4r finns mindre industrier som tillverkar havst\u00e5ngsmj\u00f6l.
